1. Raspberry Sorbet

This is a quick and easy sorbet that you can make from home. You will have to make this in advance to allow it to firm up in your freezer. All you need is two ingredients, 3 cups of frozen raspberries and ¼ cup of fat-free sweetened condensed milk. 

Instructions:

Put these two ingredients into a food processor or powerful blender. Blend until there are no chunks and the consistency is very smooth and creamy. After that, transfer your delicious dessert to a freezer safe container and allow it to firm up for at least 4 hours. Scoop and enjoy your easy homemade sorbet! This can last up to six weeks in the freezer (unless of course it is all gone before then).

2. Tiramisu

Who doesn’t love a good tiramisu? This recipe will be sure to get your mouth watering. Here’s what you will need to make your own:

  • 1 ½ cups heavy whipping cream
  • 8 oz mascarpone cheese (bring to room temperature)
  • ⅓ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 ½ cups cold espresso
  • 3 Tbsp coffee flavored liqueur (optional)
  • 1 package of lady fingers (soft or hard can be used, depending on your preference)
  • Cocoa powder (to dust on top right before serving)

Instructions:

Add the whipping cream to a mixing bowl and grab your electric mixer (stand mixer can also be used). Put the mixer on medium speed, and slowly add the sugar and vanilla extract. Keep mixing until you get stiff peaks. Add the mascarpone cheese until it is just combined then set aside. 

Bring out a shallow bowl and combine the espresso and liqueur. Get an 8 X 8 inch pan ready and quickly dip the lady fingers in the coffee. Lay them in a single layer on the bottom of the pan. Spread half of the mascarpone mixture you just made on top of the lady fingers. Repeat so that you have another layer of dipped lady fingers and the rest of the mascarpone on top. Refrigerate for at least 3 to 4 hours before serving. Dust with some cocoa powder on top right before you serve the dessert.

If you want to make this ahead of time, it will keep for up to 3 days in the fridge. Believe it or not, this recipe can also be prepped and frozen for later. Just do all the steps except the cocoa powder and cover tightly with plastic wrap followed by tin foil. This will keep in the freezer for up to 3 months. On the night before you want to eat it, thaw it in the fridge then dust it with cocoa powder a few hours before serving it.

3. Lemon Bars

Some nice, refreshing lemon bars are a perfect light dessert after your chicken Alfredo meal. You will need the following ingredients:

  • 1 cup flour
  • ¾ cup granulated sugar
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 1 Tbsp lemon zest
  • ½ cup butter, melted and cooled
  • 2 whole eggs
  • 1 egg yolk
  • 3 Tbsp fresh lemon juice
  • 1 tsp vanilla extract

Glaze to pour on top:

  • ¾ cup powdered sugar
  • 1 Tbsp fresh lemon juice
  • ½ tsp lemon zest

Instructions:

Preheat your oven to 350 degrees Fahrenheit. Line an 8 X 8 inch pan with parchment paper and cooking spray so you can lift the bars out of the pan easily after they are cooked. In a large bowl, whisk everything except the eggs, egg yolk, lemon juice and vanilla together. Use a separate bowl to whisk the rest of the ingredients and stir into the flour mixture you just made. Spread the batter into the 8 X 8 pan and bake for about 18 to 20 minutes. Do not over bake, test with a toothpick in the center and if it comes out clean, it is ready to serve. 

For the glaze, whisk all three ingredients until they are smooth and well combined. Drizzle the glaze on top of the lemon bars after they are completely cooled in the pan. The glaze will be thin, so try to spread it evenly across the whole thing. Put it in the fridge for about 2 hours to allow the glaze to set before you lift out the bars from the pan.

4. Strawberry Lemon Trifle

If you aren’t too keen on having a strong lemon flavor, try this strawberry lemon trifle. You will still get a good hint of lemon but will mostly be able to let the strawberries be the star of the show. You will need:

  • 4 oz softened fat-free cream cheese
  • 1 cup fat-free vanilla yogurt
  • 2 cups fat-free milk
  • 1 package instant lemon pudding mix
  • 2 tsp lemon zest
  • 2 ½ cups fresh sliced strawberries
  • 1 Tbsp water
  • 1 prepared angel food cake (12 oz)
  • Optional whipped topping and additional strawberries on top

Instructions:

Beat the cream cheese and yogurt together in a large bowl. Add the milk, pudding mix, and lemon zest then beat until smooth. Use a blender to blend ½ cup of the cut strawberries and water until combined. Tear pieces of the angel food cake into 1 inch cubes and place ⅓ of those pieces in a trifle bowl (or 3 quart serving bowl). Add ⅓ of the pudding mixture and half of the remaining strawberries on top of that. Drizzle half of the strawberry sauce you blended on top of that and repeat all those layers again. The very top layer will have the last of the angel food cake pieces and pudding mixture. Add whipped topping if desired, and cover and refrigerate for at least 2 hours before serving.

5. No-Bake Fruit Tart

Nothing says refreshing like fresh fruit. This recipe is so simple that you don’t even need an oven to make it! There are 3 components to it including a crust, filling, and fruit topping.

Crust:

  • 1 ½ cups graham cracker crumbs
  • ½ cup sliced almonds
  • 8 Tbsp melted butter

Instructions: Add everything to a food processor and pulse until well combined. Press the crumbs firmly into an 11 inch tart pan. Set in the fridge for 1 hour to let it harden before adding filling and toppings.

Filling:

  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 8 oz cool whip
  • 1 tsp almond extract or vanilla extract

Instructions: Use an electric beater to mix together cream cheese and powdered sugar until light and fluffy. Stir in cool whip and almond extract until well combined. Spread evenly over the crust.

Topping:

  • ½ to ¾ pound of fresh strawberries sliced
  • 1 pint fresh blueberries
  • 1 pint fresh raspberries

Instructions:

Wash and prep your berries and place on top of filling. Let this tart sit in the fridge for at least 1 hour and cut into slices before serving.
